"Drop of a hat:" to do someting immediately, without delay.

The origins of the expression seem to give the " doing something immediately" a bit more depth as the dropping of a hat was generally the signal of the start of a fight.

 

Example:

I found many Old Soldiers, who called themselves Democrats, and were ready to fight, at the drop of a hat, with any man who had aught to say against Gen. Scott.

Milwaukee Daily Sentinel (Wisconsin), 19 Jul. 1852.

I had the original t-touch for 8yrs and loved it, looked presentable,and was useful too with the compass and Barometer. So what does the sea touch do?

Means I would buy it at the drop of a hat. For those interested, although the phrase was well established at the time, Dorothy Parker used it in a poem speaking of Love, and whether she could bear to love again and wrote:

 

Sweet, why do you plead me, then,

Who have bled so sore of that?

Could I bear it once again? . . .

Drop a hat, dear, drop a hat!
