My all time favourite Rolex is definitely 1680-8 with tropical dial. 
Unfortunately I never have seen Franken or replica offered of it with tropical dial...

Well, it's an easy one for me, if I split it into 'modern' and 'vintage' era. 

Of the 'modern' (read SEL bracelet era), it's the 16610LN on oyster.

Of the earlier era Subs, it would probably be one of the Rolex cased Tudor Subs, like this Snowflake:
