What do you class as a sensible number of a Watch collection?

Oh boy...here's my view on the "essential" collection:

3 Rolex -- something new-ish that's not a plain sub, then two vintage looking knock-arounds

5 PAMs -- I know, sorry, but you have to have one sub, one radiomir, a 1950, one carbon fiber and one brown dial

2 AP -- A 1500 series and a ROO (non-chrono for me)

3 Breitling -- Navi, SuperOcean (your choice), and an Avenger

2 IWC -- Big Pilot and Portofino 

And a few novelties -- a Patek, Zenith Pilot, a couple more interesting pieces

Easy...

As many as I can possess until I start to hear the wifey's bitchin...then i know its time to slow down...jk

But must haves are

2 Sports watches...one on bracelet, one on strap  (Daytona, Offshore, GMTs)

2 Divers one on bracelet, one on rubber (Submariner, Planet Ocean, PAM Subs)

2 Dress watches  (PP Nautilus, JLC/Cartier)

2 Casuals (PAMs/Breitlings/Blancpain FF)

That will fill up the standard eight slot watch box.  That would be my essentials.
